My daughter woke up a little better than when she went to bed last night.  Wife told me she would call the doctor when they opened and get her an appointment when they opened.  I had their blessing to go on to the cookout without them.

The weather cooperated for the most part throughout the day.Although it did sprinkle at times it didn’t last long.  The park was to close all the roads inside the park at 9am and would not allow any vehicles to enter or exit the park unless it was an emergency.  Also at 9am was the start time for the Fairyland Festival for the younger kids.  Do driving through there either.  So I wanted to get there before they closed the roads and unload my truck and then move my truck to a designated parking area.

At about 11am we started cooking the chicken pot pie and two different types of apple cobbler.  One was my recipe and the other is a recipe that was found in one of my cookbooks.  Where we were located we were in direct view of everyone that came down our little road.  I can’t tell you how many times we were asked what’s for supper.  We was told that you could smell the aroma over into the next campground.

There were about fifteen people that I cooked for today.  One of my smaller groups. Everyone seemed to enjoy themselves and went back for seconds and even thirds.

By 2:30 there was an estimated 10,000 people enter the park to trick or treat.  I’ve never seen so many ghost and goblins in all my days.  I was really impressed with all the imagination on the outfits.  Although, I do have to question a couple of them on their legality.  Some of them showed way too much and left nothing for the imagination.

Around 6pm the rains came and was heavy and furious.  For the most part the rain stopped the trick or treating.  Once the rains settled in the festivities ended rather abruptly.

I did hear back from my wife about my daughters doctor’s visit.  There is a small chance the has Salmonella or other gastric issue.  We won’t know for another 48 hours.  Doctor’s told her to rest and not go anywhere this weekend.

The rain came in around 5pm or so and when it decided to rain, it poured.  I had not loaded anything in the truck and I along with all my cast iron got soaked doing so.  I guess I’ll be spending some time tomorrow making sure all my cast iron is dry before putting everything is.

All in all I had a wonderful day today.  Although my family was not able to join me I had fun cooking for the folks as well as watching all those ghosts and goblins.

It’s going to be a wet weekend but I’m going to make the best of it.  I’m cooking for a small group for a pre halloween party.  I’ve got to get up early so that I get set up before they close the campground down to traffic.  The whole family was going until moments ago when one of my daughters decides to get sick.  My wife may be going to take her to the doctor in the morning if she’s not any better.

I know I’ve posted this picture before but this one fits tonight’s topic so well.  Every time my girls leave the house, whether it’s going to school, to church or just going out to the store with their mom, Sophie will either sit by the door or sit on the back of the couch looking outside waiting on her girls to come home.  Most of the day while the girls are away at school both of our cats will stay on the foot of my bed but when it gets close to the time for the girls to get home Sophie will take her place on the back of the couch and wait for her girls to come home.  Once the girls are home she stays by their side until they go to bed.  I’ve never owned a cat that was so dedicated to any of my kids as she is.  The other cat is just happy that we feed him and keep his food dish completely ful.

Had a rough day at work but I won’t go there.  The good news is that my son is home from college for a few days and I’m going to enjoy his time with us.  Tonight we’re watching the World Series which we always like to do since he was a little boy.  The cats seem to even enjoy his company since they won’t leave his side since he’s been home.

The girls went to a church fall festival tonight dressed as Thing 1 and Thing 2.  They looked adorable when they left the house.  I believe they would have won the costume contest if it wasn’t for the judges being related to them.

Two more days until the weekend and Halloween.  I’ve been asked to go to a local state park and do some Dutch Oven cooking for a small group.  This park does a huge trick or treating.  It’s been estimated at over 30,000 kids come to this park just for this.  My kids are excited about going and seeing all the excitement.  It’s supposed to rain about the time the trick or treating starts so I’m hoping all the kids have fun.

Or lack thereof.

Please forgive the rant and it may not do anything but relieve my blood pressure.

Within the past few weeks there have been at least five incidents where either a police officer or a teacher has been in the news because of their actions toward kids or young adults.  In most cases the first thought that comes to most people’s minds is it’s the adults fault for his/her action.  Only last week at our child care facility two adults were arrested for physically abusing a toddler.  To me that’s just sick.  The toddler has no control of his/her actions therefore the adult is automatically at fault, especially if it’s caught of camera.

When the child is older, say a teenager that could be something different.  We’ve become people that are so quick to judge and just look at the front end we forget to look at the complete picture before passing judgement.  We as Christians aren’t supposed to judge anyway, but that’s beside the point.  The point I want to make is the the young people of today do not have respect for their elders.  It’s plain as the nose on my face, as my grandmother used to tell me.  If I treated my mom or dad the way a lot of these young people treat their folks or any other adult as the case may be, I couldn’t walk for a week.  I went to a high school football game the other night where a young girl was yelling at her mother.  First of all, from what I saw at this conversation, this was not the first time the young lady had talked to her mom that way, which is sad.  Where is the respect?  Where’s the discipline?  Is it not taught in the home anymore?  My kids know it not because I’ve seen it with my own eyes but because other people have told me how well behaved they are and how they are respectable young ladies.

The reason I bring this up because today a very good friend of mine’s wife was arrested today on child misconduct charges.  This lady has been teaching high school special education for over 28 years and has never had any problems with any child.  According to the news reports the child was injured and the parents are blaming the teacher.  We don’t have both sides of the story but the truth will come out in the end.  What I fear is going on because I know the type of kids she’s teaches there is that the parents are looking for attention and maybe even some money in court.  There again I have to ask, where is the respect for the other families involved.  If there is a case, if there is misconduct on the teachers part then so be it.  But if not and it’s only a ruse to get money then you’ve just destroyed the teacher’s reputation, the family’s reputation and the teachers job, for what?  Makes me sick.

Rant Over.  Pray for this family.

It was raining here when we got out of bed this morning.  When it’s raining hard in the mornings I try and take my daughters to school.  They normally walk to school since it’s so close.  I got up, took my shower looked in the mirror and saw that my face and lip had gotten worse over night.  I was already going to be late to work taking the girls to school that I went ahead and went to one of those doc in the box not far from here.  Somehow and by some weird chance I got poison ivy on my bottom lip and on my right arm.  No where else.  The doctor gave me a script for some ointment and some pills for the swelling.  My face is already looking normal and my lip is somewhat better.  It’s still feels like it’s on fire but I’m sure it will fell better soon.  Thanks for everyone’s concern.

I’m not sure what’s going on or if it has anything to do with some trimming I did yesterday or not but early this morning I was awaken by the pain in my bottom lip as if I had bitten down on it.  I got up and looked in the mirror only to find my lip had several blisters.  I took some pain meds and tried to get some sleep but the pain was relentless.  I managed to finally get to sleep around 3am and awoke around nine something.  After breakfast my wife noticed some more blisters on the inside of my right arm.  Funny how I didn’t even notice them.  I guess because they’re not hurting as bad.  About an hour ago my wife noticed that not only had my bottom lip has gotten bigger but she also noticed that my left side of my face has swollen.  I guess a trip to the doctor will be in order tomorrow after work.  Hopefully I can make it that long and not have to leave early.

Bacon Wrapped Turkey Breast

Bacon Wrapped Turkey Breast

Bacon Wrapped Stuffed Turkey Breast
Dutch Oven: 14” with rack
1 3 lb Turkey Breast
1 lb thin sliced bacon
1 10oz package chopped spinach, thawed and drained
1/2 stick butter, softened
1 tablespoon garlic, crushed
2 teaspoons dried basil
1/2 cup Asiago cheese, shredded

Remove packaging from turkey breast and place breast skin side down on cutting board, spreading the skin out as much as possible to allow to wrap around breast. Blend butter, garlic and basil together and spread over inside of turkey breast. Place spinach lengthwise down center of turkey breast and top with Asiago cheese.

Pull skin around breast to make a roll. Set aside. Lay strips of bacon on cutting board slightly overlapping each piece. Place turkey breast on top of bacon strips and begin overlapping bacon horizontally over turkey breast. Making sure to overlap ends of bacon to prevent curling of bacon while cooking.

Place turkey breast on roasting rack inside a 14″ Dutch oven and hand over medium high heat (450 degrees). Add top coals and cook for approximately 1 to 1 1/2 hours or until thermometer reads 170 degrees. Remove from oven and allow to rest prior to carving.

After an exhausting afternoon watching the Alabama/Tennessee game I decided that I needed a break from all the excitement.  It was such a close game toward the end that my head started hurting, my blood pressure got out of wack; I just needed to get away.  I went out in the back yard and found my fire pit and built a fire.  I grabbed my camping chair and just sat there watching the fire.  At first I sat down with out my cell or house phone but then I realized that the wife and kids were not home and if they needed me they would not be able to find me.  So, I went back in and grabbed the cell and went back outside.

To make a long story short, my wife and kids got home, Bama won, wife fixed supper and afterwards I went back outside to enjoy the fire.  To my astonishment, my wife joined me sometime later and we sat for a couple of hours, just her and I, just watching the fire.  We held hands and talked about our kids.  Keep in mind that my girls were still inside and didn’t want any part of this, which was fine with us.  Just sitting there getting to know each other again.  Felt good while it lasted.

Tonight my girls were gone to a football game and my wife was up the hall grading papers as she normally does this time every evening and I was following the football game via a twitter account.  I got to thinking how it was when I was in the band at their age and things that happen after I graduated.

The year after I graduated high school I remember driving back to the school after a football game to pick up my younger brothers who were in the band during this time.  I pulled up to the school to find some other teenagers already there.  I had assumed they were there to pick up someone but after a few minutes after I arrived I found out they were up to no good.  They were there to steal gas and batteries and I had interrupted them.  They came up to my car and wanted to know what I was doing there and I told them that I was there to pick up my brothers.  They encouraged me to leave and let them get on with their business.  I didn’t hesitate to do so.  I didn’t go home, I went to the nearest neighbors and called the sheriff’s department.  They were there within minutes but the thieves had already took off.  I went to the store across the street and called 911 and talked to the dispatcher and gave her the description of the vehicle. The thieves were caught with all the extra gas cans full of gas along with the several batteries that they had taken that night.

When the band busses pulled up in the school parking lot the sheriff department was still there asking questions.  They had already apprehended the thieves and were bringing them back to be identified.  All the kids on the bus wanted to know what was going on and of course me being the hero of the night I couldn’t wait to tell my story.  After I got home my dad reminded me that these boys wouldn’t stay in jail long and after they got out they may come to hunt me down.  After my discussion with my dad, I didn’t feel like a hero much anymore.

I never heard anything else from those boys.  I was a hero for the rest of the season but I was always looking over my shoulder.
